Better for You Sloppy Joes

YIELD: 8     TOTAL TIME: 40 minutes

INGREDIENTS

  • olive oil for pan

  • 1/2 yellow onion, diced

  •  2 ribs celery, diced

  • 2 carrots peeled and diced (I like to choose colorful carrots, specifically purple)

  • 2 pounds ground grass fed beef

  • 3 cloves garlic, minced

  • 2 15oz cans plain tomato sauce (tomato puree)

  • 1 tablespoon honey

  • 1 tablespoon chili powder

  • 2 teaspoons apple cider vinegar

  • 1 tablespoon dijon mustard

  • 1/4 teaspoon cinnamon

  • buns for serving (recommend using whole grain)

  • Serve with side of choice

INSTRUCTIONS

1.     Heat pan over medium heat. Add oil once warmed and then add the onion, celery and carrots. Cook for about 3-5 minutes.

2.     Add the ground beef and garlic. Break the meat up with a spatula and cook until browned. Drain fat if you wish but not necessary.

3.     Add tomato sauce, honey, chili powder, vinegar, mustard, and cinnamon. Bring to a simmer and turn to low. Simmer for 10 minutes.

4.     Serve warm with buns and side of choice.
